- 1 c. softened butter
- 1 c. brown sugar
- 1/2 c. sugar
- 2 eggs
- 1 t. vanilla
- zest of 1/2 an orange
- 1 1/2 c. flour
- 1 t. baking soda
- 1 t. cinnamon
- 1/2 t. salt
- 3 c. uncooked quick oats
- 1 c. dried or fresh cranberries
- 1 c. chopped pecans
- 1 c. white chocolate chips
Instructions:
Preheat oven to 350. Using a large mixing bowl, add butter and sugars and beat until creamy.
Mix in eggs, vanilla, and orange zest. Beat until combined.
In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
Gradually add flour mixture to wet mixture. Mix well.
Stir in oatmeal, then gently stir in cranberries, pecans, and white chocolate chips.
Drop by rounded teaspoons onto cookie sheet lined with parchment paper.
Bake for 12-14 minutes, or until cookies start to brown around the edges.
Once removed from oven, let cool on baking sheet for 5 minutes then transfer to wire rack to finish cooling.
**Makes approximately 4 dozen small cookies or 2 dozen large.
