Create-a-Quiche

Quiche Base:
3 eggs
1/2 c. half and half (I use evaporated milk sometimes for a lighter version)
2 T. flour
1/4 t. salt
Dash of black pepper

Filling ingredients:
3 bacon slides or 1/2 c. chopped ham
1/3 c. chopped tomato
2 T. chopped onion
1/2 c. shredded cheddar cheese

Preheat oven to 375.  Spray small oval baker (or small dish) with cooking spray.  Whisk together quiche base ingredients and set aside.

Combine filling ingredients and spoon into bottom of baking dish.  Pour quiche base over filling ingredients.

Bake 30-35 minutes or untl center is set.  (A knife inserted in center will come out clean)  Let stand 5 minutes before serving.  This recipe serves 2.  Double and bake in a larger dish to serve 4-5.

(You can make a variety of versions:  bacon, tomato and Swiss cheese; spinach, mushroom and provolone cheese; ham, broccoli, and cheddar cheese.  Whatever you like!)
