Homemade Granola

4 c. old-fashioned oats
1 1/2 c. sliced almonds (I used pecans)
1/4 c. packed light brown sugar
1/2 t. salt
1/2 t. ground cinnamon
1/4 c. vegetable oil
1/4 c. honey
1 t. vanilla
1 1/2 c. raisins or dried cranberries (or a combination of each)

Preheat oven to 300 degrees.  In a bowl mix the oats, nuts, brown sugar, salt and cinnamon.  In a saucepan, warm the oil and honey.  Whisk in vanilla.

Carefully pour the liquid over the oat mixture.  Stir gently with a wooden spoon.  Spread granola on a 15 x 10" baking pan.

Bake 30 minutes or until golden, stirring carefully every 10 minutes.  Transfer pan to a rack to cool completely.  Stir in dried fruit.  Seal granola in air-tight container or self-sealing plastic bag.  Store at room temperature for 1 week or in the freezer for 3 months.
